Egg Bhurji Recipe | Tamil Nadu style

Ingredients
  • 4 Eggs
  • 2 Medium Onion
  • 2 Tomato
  • 2 Green Chilli
  • 1 Tsp Ginger Garlic Paste
  • 2 Tbsp Oil
  • 1 Tsp Cumin Seeds
  • 1 Tsp Mustard Seeds
  • 1 Tsp Red chilli powder
  • 1/2 Tsp Turmeric powder
  • 1 Tsp Garam masala
  • Pinch of Hing
  • Salt as per taste
  • Chopped curry leaves
Preparation Method
  1. In a large bowl, beat the eggs using a spoon and keep aside.
  2. In a pan, heat the oil and put 1 Tsp Mustard seeds after a minute add, 1 Tsp Cumin seeds and Chopped Curry Leaves.
  3. After one more minute, add 2 finely chopped Onions. Fry the chopped onions until it gets a brownish shade and then add 2 finely chopped Tomatoes
  4. Mash the mixture gently in a low flame, mash (and cook) the tomatoes until it becomes a little mashed, not complete squashed, and then add salt to taste
  5. Now, after a minute add 1 Tsp ginger garlic paste, 1 Tsp Chilli Powder, 1/2 Tsp Turmeric Powder, 1 Tsp Garam masala and then add pinch of Hing.
  6. Fry this masala for couple of seconds and then pour in the slightly beaten eggs and keep whisking until cooked.
  7. Stir well till it separate into small pieces. (This should take at least 10 mins)
  8. Garnish with coriander and serve with bread or chapathi .
