Egg Curry Recipe | Tamil Nadu style

Ingredients
  • 2 Eggs
  • 2 Medium Onions
  • 3 Tomatoes
  • 2 Tbsp oil
  • 1 Tsp Mustard seed
  • 1 Tsp Fennal seed
  • 1 Tsp Cumin seed
  • 1 Tsp ginger garlic paste
  • 1 Tsp Chilli Powder
  • 1/2 Tsp Turmeric Powder
  • 1 Tsp Coriander Powder
  • 1 Tsp Garam masala
  • 1 Tsp Egg Curry Massala
  • 1 Tsp Mutton Masala
  • 3 Tsp Coconut Powder
  • Chopped Curry Leaves
  • Chopped Coriander leaves
Preparation Method
  1. In a pan, heat the oil and put 1 Tsp Mustard seeds. After a minute add 1 Tsp Fennal seed, 1 Tsp Cumin seeds and Chopped Curry Leaves
  2. After one more minute, add 2 finely chopped Onions. Fry the chopped onions until it gets a brownish shade and then add 3 finely chopped Tomatoes
  3. Mash the mixture gently, mash (and cook) the tomatoes until it becomes mediumly mashed and then add salt to taste
  4. Now, after a minute add 1 Tsp ginger garlic paste, 1 Tsp Chilli Powder,  1/2 Tsp Turmeric Powder, 1 Tsp Coriander Powder, 1 Tsp Garam masala, 1 Tsp Egg Curry Massala, 1 Tsp Mutton Masala and then add 3 Tsp coconut powder
  5. Fry this masala for 2 sec then add 2 glasses of water then cover and let it cook.
  6. Once it starts boiling, break the eggs into it. Ensure that you don't break the egg yolks at any point. leave it for 5 mins
  7. Once the gravy is thick and the eggs are cooked, take the pan off the heat and then garnish with coriander leaves. Egg curry is ready.
