Chicken Fried Rice


INGREDIENTS

  • Chicken Breast - 1/2 kg
  • Soy Sauce - 1 Tbsp
  • Lime Juice - 1/2Tsp
  • Basmati Rice Cooked -3 Cup
  • Garlic Chopped - 1Tbsp
  • Pepper -1/2 Tsp
  • Oil - 2 Tbsp
  • Green Chili -1
  • Red Chili Sauce -1Tsp
  • Green Chili Sauce -1Tsp
  • Spring Onion -2 Sprig
  • Capsicum -1/2 Cup
  • Frozen Green Peas  - 1/4 Cup
  • Egg - 2
  • Salt as needed 
Preparation
  1. Its best to use day old leftover rice that’s been in the fridge overnight. The fridge will take away some of the moisture from the rice, leaving you with grains that are drier and separate. If you don’t have leftover rice and want to mimic that texture, cook rice, spread it out on a baking tray and then refrigerate it for at least half an hour.
  2. If you are making it using fresh rice, then make sure that you cool them down fully before adding to the recipe.
  3. Cut the chicken into bite size and in a bowl add chicken pieces with a pinch of salt ,1/4 tsp pepper powder, lime juice and 1 tsp Soy Sauce .Mix together and Keep aside for 15 minutes.
  4. Heat a tablespoon of oil in a pan. Whisk the eggs and add them to the pan with salt. Let the egg fry in the oil for 10 seconds and then scramble it, making sure not to brown it. Remove it from the pan. Kept aside.
  5. In the same Pan heat a tablespoon of oil add marinated chicken pieces, cook until golden and no longer pink
  6. Now add chopped Garlic and saute for 3 mins and add veggies(Peas, Green Chili, Onion, Capsicum, Spring Onion ) 
  7. Fry for 4 to 5 mins. Add remaining Soy Sauce, Red Chili Sauce,  Green Chili Sauce, Salt and Pepper and cook for a few seconds.
  8. Add the scrambled egg and cooked rice and mix well. Cook for a minute. Switch off the flame.
  9. Chicken Fried Rice is ready to serve
