Chicken Hakka Noodles

 Ingredients

  • Boneless Chicken - 250 gm
  • Pepper Powder - 1/2 Tsp
  • Soya Sauce - 1Tbsp
  • Garam Masala - 1 Tsp
  • Salt as needed
  • Noodles - 150 gm
  • Oil - 3 Tbsp
  • Egg - 2
  • Garlic Minced or chopped - 2Tsp
  • Spring Onion Whites/ Onion Chopped - 1/4 Cup
  • Spring Onion Green - 1/4 Cup
  • Capsicum - 1/4 Cup
  • Cabbage - 1/4 Cup
  • Red Chili Sauce - 1 Tbsp
  • Green Chili Sauce - 1 Tbsp 
Instruction
        Chicken Marination
    1. Cut chicken into bite sized pieces. In a bowl add Chicken pieces, 1/4 Tsp Pepper powder, 1Tsp Soya Sauce ,1Tsp Garam Masala and little bit of salt. Mix well
    2. Marinate the chicken upto 24 hours or keep it aside for 15 to 20 mins.
        Noodles Preparation
    1. In a large pot or pan add 2.5 liters water to boil. Read the Instructions on the pack of Noodles, if salt and oil are needed. If needed then add 1Tbsp of oil and salt to the boiling water.
    2. Now add the Noodles to the boiling water . Boil the noodles until al dente. The Noodles must be firm and partially boiled(3 to 4 mins).
    3. When done with cooking, drain them  to a immediately, and rinse the noodles with cold Water.
    4. Drain the noodles once again and transfer to a large bowl. Now add 1Tsp oil and toss well, so that the noodle do not stick together. 
    5. Heat a tablespoon of oil in a pan. Whisk the eggs and add them to the pan. Let the egg fry in the oil for 10 seconds . Add salt and 1/4 Tsp pepper and then scramble it, making sure not to brown it. Remove it from the pan. Kept aside.
    6. In the same Pan heat 2 tablespoon of oil add marinated chicken pieces, fry until completely cooked. Chicken should be cooked well and must be able to cut it easily with the wooden spatula.
    7. Move chicken to one side of pan add 2 tsp of oil to the pan and add chopped onions and garlic.
    8. Fry for a minute and add  Capsicum, Cabbage and Spring Onion Green ,fry the veggies for a minute.
    9. Mix Veggies and Chicken. Fry for a minute , do not over cook.
    10. Now add  1 Tbsp Red Chili Sauce, 1 Tbsp Green Chili Sauce and remaining Soya Sauce ,mix well and add noodles and salt if needed.
    11. Finally add the scrambled egg and fry for 2 minutes. Switch off the flame.
    12. Serve Chicken Hakka Noodles hot.
