Banana Flower fry

Ingredients
  • Banana florets – 3 cups 
  • Turmeric powder – 1/4 tsp
  • Sambar Powder - 1 1/2 tsp
  • Onion – 2 medium size
  • Grated coconut – 1/4 cup
  • Salt as required
  • Oil – 2 tsp
  • Mustard seeds – 1 tsp
  • Split urad dal -3/4 tsp
  • Red chillies – 3
  • Hing – 1/4 tsp
  • Curry leaves – a sprig 
Method 
  1. Clean and chop banana flower and keep it in diluted buttermilk to prevent discoloration. 
  2. Once you finish cleaning and chopping, rinse and drain the buttermilk, add 1/4 cup of water, salt needed,sambar powder, turmeric powder and pressure cook until soft or Add the chopped banana florets into the boiling water and cook .
  3. Drain the water and keep the cooked florets aside.
  4. Heat oil in a pan, add mustard seeds, when it splutters, add urad dal, red chilli, Hing, curry leaves and saute until dal turns golden brown.
  5. Add finely chopped onions and garlic , saute until onions turn transparent.
  6. Add the cooked banana florets to the pan and saute until they are dry. Since they are already cooked, it should not take more than a few minutes.
  7. Finally, add the grated coconut and toss for a couple of minutes until everything combines well.
  8. Delicious and fiber rich Banana Flower Fry  is ready to be served with rice.
