Egg Thokku
Ingredients
- Eggs - 2
- Onion - 3/4 cup
- Green Chilli - 1 finely chopped
- Garlic - 1 tbsp minced
- Ginger-garlic paste - 1 tsp
- Tomato - 3/4 cup (finely chopped)
- Chilli Powder - 3/4 tsp
- Turmeric powder - 1/4 tsp
- Coriander powder -1 1/2- 2 tsp
- Salt to taste
- Pepper Powder to taste
- Oil -2 tbsp
- Mustard seeds -1 tsp
- Curry leaves -1 spring
Method
- Place eggs in a vessel, add 1/4 tsp of salt and enough water to cover the eggs. Bring water to boil over medium heat.
- Once it starts boiling, simmer for 5-6 minutes and remove from heat. Cover it with a lid. Let is sit for 10 minutes.
- Drain the water, pour cold water over it and peel the shell. Perfect hard boiled eggs are ready.
- Make 3-4 lengthwise slits on the eggs and keep it aside.
- Heat oil in a pan, add mustard seeds, when it splutters, add finely chopped onion, green chillies and curry leaves.
- Saute until onions turn transparent. Add ginger-garlic paste and saute for a few more minutes.
- Add tomatoes, turmeric powder, chilli powder, coriander powder, salt needed and cook until tomatoes become soft and mushy.
- Then add the hard boiled eggs, sprinkle pepper powder and mix until it is well coated with the masala.
- Remove from heat and garnish with finely chopped coriander leaves. Enjoy egg thokku with rice or chapathi.
