Mango chutney
Ingredients
- Mango - 6 No
- Sugar - 2 Cups
- White Vinegar - 1 Cup
- Onion - 1 Medium, Chopped
- Raisins - 1/2 Cup
- Ginger - 1/4 Cup, Finely Chopped
- Garlic - 1 Clove
- Mustard seeds - 1 Tsp
- Red Chilli Pepper Flakes - 1/4 Tsp
Method
- Peel and finely chop the mangoes
- Combine sugar and vinegar in a pan and bring to a boil, stirring until sugar dissolves.
- Add remaining ingredients and simmer, uncovered, until syrupy and slightly thickened, 45 minutes to 1 hour. Stir occasionally during cooking.
- Pour mixture into sterilized jars, to 1/2 inch below lid level, and seal
- keep a jar for up to a few weeks in refrigerator.
