Mango chutney

Ingredients
  • Mango - 6 No
  • Sugar - 2 Cups
  • White Vinegar - 1 Cup
  • Onion - 1 Medium, Chopped
  • Raisins - 1/2 Cup
  • Ginger - 1/4 Cup, Finely Chopped
  • Garlic - 1 Clove
  • Mustard seeds - 1 Tsp
  • Red Chilli Pepper Flakes - 1/4 Tsp
Method
  1. Peel and finely chop the mangoes
  2. Combine sugar and vinegar in a pan and bring to a boil, stirring until sugar dissolves.
  3. Add remaining ingredients and simmer, uncovered, until syrupy and slightly thickened, 45 minutes to 1 hour. Stir occasionally during cooking.
  4. Pour mixture into sterilized jars, to 1/2 inch below lid level, and seal
  5. keep a jar for up to a few weeks in refrigerator.
