Meal maker(soya chunks) Biryani Recipe | Tamil Nadu style


Ingredients
  • Basmati rice - 2 cup
  • Soya chunks - 30
  • Onion - 1
  • Tomato, small - 1
  • Curd - 3 tblsp
  • Turmeric powder - 1/4 tsp
  • Red chilli powder - 1 & 1/2 tsp
  • Green chillies - 3
  • Mint leaves - 1/4 cup
  • Coriander leaves, chopped - 1/4 cup
  • Ginger garlic paste-1 & 1/2 tsp
  • Salt - As needed
  • Ghee or oil - 3 tblsp
  • Cinnamon - 1 inch piece
  • Bay leaf - 1
  • Cloves - 4
  • Cardamom - 2
  • Jeera/ Cumin seeds - 1 tsp
  • Pepper corn-5
  • Biryani Masala – 2 Tbsp
Preparation method
  1. Soak basmati rice in warm water for 30 mins atleast. 
  2. Boil water with 1/4 tsp salt and add the soya chunks. Cook in medium flame for 10 minutes.
  3. Rinse with cold water and squeeze it till dry and again repeat it. Keep aside.
  4. Heat a small pressure cooker with ghee and add Cumin seeds,bayleaf, cinnamon, pepper corn, cardamom,cloves and then add chopped onions, saute for 1 min till it turns transparent.
  5. Add  ginger garlic paste and fry until dry for 2 minutes in medium flame.
  6. Add tomato, salt, red chilli powder, biryani masala, green chilli and turmeric. Fry until tomatoes become soft.
  7. Add curd, mint leaves, coriander leaves and fry for 2 more minutes.
  8. Now add Soya chunks and soaked rice with 3 cups of water and then close the lid, do not put on the weight yet
  9. After steam is visible ,put the weight onto the pressure cooker, then keep the flame low for 15 minutes, after that turn off the flame without any hisses.
  10. Serve hot with onion raita.
