Mutton Biryani Recipe | Tamil Nadu style


Ingredients
    • Mutton – ½ kg
    • Basmati rice – 2 cups
    • Big onions – 1 no( chopped lengthwise)
    • Ginger garlic paste – 2 Tbsp
    • Tomato – 1 no( big sized and riped)
    • Mint leaves – ¼ cup
    • Coriander leaves – Handful
    • Turmeric powder -1Tsp
    • Red chilli powder – 1 Tsp
    • Biryani Masala – 2 Tbsp
    • Garam Masala –1/2 Tsp
    • Lemon Juice – 2 Tbsp
    • Salt – as needed
    • Oil + ghee or butter – 4 Tbsp
    • Curd-1Tbsp
    • Bay leaf-2
    • Pepper corn-5
    • Cinnamon-1inch
    • Cardamom-3or 4
    • star anise-1
Preparation method
           
      "First prepare marination"
    1. Wash Mutton thoroughly with enough water, then add a pinch of turmeric powder and mix well. Again rinse with water for two times.
    2. In a wide bowl, Mix the curd,Red chilli powder,lemon juice,Garam masala and biryani Masala blend together, add washed mutton pieces to it and coat well. Keep this in refrigerator for 30 mins to 1 hour.
Step by step procedure:
    1.  Heat a pressure cooker, add oil, bayleaf, cinnamon, pepper corn, cardamom,star anise and then add chopped onions, saute for 1 min till it turns transparent.
    2. Add ginger garlic paste, sauté till the raw smell evacuates.
    3. Add chopped tomato and mint leaves to it and stir until the tomato cooks well. Now add the marinated mutton. Stir for 2 mins in high flame.Add a cup of water to it,
    4. Close the cooker with a lid and pressure cook for 2 whistles, then switch off the flame.
    5. After the pressure releases, separate the cooked mutton pieces from water and keep aside.
    6. Wash and soak basmati rice in enough water for 20 minutes.
    7. Measure the mutton cooked water to use with rice. If the water is not sufficient, add hot water to it and keep aside.We need 3 1/2 cup water.
    8. Grease pressure cooker with butter or ghee ,heat it, then add oil + ghee to it.
    9. Drain basmati rice and add it to the cooker fry for 3 mins and add water and mutton pieces and then close the lid, do not put on the weight yet.
    10. After steam is visible ,put the weight onto the pressure cooker, then keep the flame low for 15 minutes, after that turn off the flame without any hisses.
