Lemon Rice
Ingredients
- Oil - 1 tbsp (preferably sesame oil)
- Salt - to taste
- Turmeric powder - ½ tsp
- Curry leaves - few
- Roasted Peanuts - 1 tbsp
- Bengal gram - ½ tsp
- Split black gram - ¼ tsp
- Mustard - ¼ tsp
- Dry red chillies - 2 or 3
- Lemon - 1 no
- Cooked Rice - 2 cup
Method
- Cut the lemon and squeeze the juice discarding the seeds. Keep it aside.
- Now in a pan, heat a tbsp of oil. Pop some mustard seeds, Bengal gram and split black gram.
- Add the roasted peanuts, dry red chilly and curry leaves. Fry for half a minute.
- Add the turmeric powder and switch off.
- Finally add the lemon juice and salt. Immediately add the rice. Toss everything together till it is well mixed. Taste and adjust the salt or lemon juice as needed.
- This rice stays good at room temperature for 2 days and hence is a best choice while travelling.
